It’s finally the time of year to start tapping into some of our new brews. The first of the sakes we are releasing is the Junmai Kimoto Ginjo. Kimoto refers to a specific yeast starter method. During a kimoto yeast starter, the rice mash is continually agitated to help accelerate the breakdown of the rice.
We are in the dead of winter; this is the time where we pull out all the stops and start brewing our ultra premium sake. The Junmai Ginjo Ak-12 is one of these ultra premium brews, and we are brewing twice as much as normal this year. This sake has been a real crowd favorite that always sells out quickly. Also, be on the look out for our Junmai Tokubetsu and Junmai Daiginjo!
